Ingredients
- 60 g chia seeds
- 400 g tin of full fat coconut milk (full fat milk is higher in calories but makes it so much creamier)
- 100 mls unsweetened almond milk (or any milk of choice)
- 20 g honey
- 1 teaspoon vanilla essence
Instructions
- Add all the ingredients to a container and mix well.
- Cover and let sit for 5-10 minutes.
- Mix well again to remove any lumps.
- Cover and leave in the fridge for a few hours or overnight if possible, so the seeds will absorb all the liquid and form a pudding like consistency.
- The next day, stir once more to combine everything and portion into your bowls.
- Add whatever toppings you like – fruit, nuts, seeds, granola or a protein source such as Greek yogurt etc.
