Thai Green Curry

  • 500g mini chicken breast fillets
  • 1 finely chopped onion
  • 1 finely chopped chili
  • 2 cloves grated garlic
  • 1 thumb sized piece grated ginger
  • 150g broccoli
  • 120g baby corn
  • 1 chopped red pepper
  • 20g green curry paste
  • 1 tbsp tomato puree
  • 1 tbsp soy sauce
  • 400ml light coconut milk (Tesco brand is the lowest calorie)

  • 1 kcal spray


  • Heat a wok on medium and spray with 1 kcal spray.
  • Add the onion and sweat for 2 minutes until it starts to soften.
  • Add the chili, garlic, ginger and curry paste and cook for 2-3 minutes stirring well.
  • Add the chicken, broccoli, corn, red pepper, tomato puree and coconut milk.
  • Bring to a simmer for 10 minutes stirring from time to time.
  • Add the soy sauce and season with black pepper.
  • Serve with boiled rice, cauliflower rice or noodles.
