Simple and tasty. Can swap chicken for prawns, tofu, Quorn chicken pieces or other protein source of choice.

Ingredients
- 500g mini chicken breast fillets
- 1 finely chopped onion
- 1 finely chopped chili
- 2 cloves grated garlic
- 1 thumb sized piece grated ginger
- 150g broccoli
- 120g baby corn
- 1 chopped red pepper
- 20g green curry paste
- 1 tbsp tomato puree
- 1 tbsp soy sauce
- 400ml light coconut milk (Tesco brand is the lowest calorie)

- 1 kcal spray
Instructions
- Heat a wok on medium and spray with 1 kcal spray.
- Add the onion and sweat for 2 minutes until it starts to soften.
- Add the chili, garlic, ginger and curry paste and cook for 2-3 minutes stirring well.
- Add the chicken, broccoli, corn, red pepper, tomato puree and coconut milk.
- Bring to a simmer for 10 minutes stirring from time to time.
- Add the soy sauce and season with black pepper.
- Serve with boiled rice, cauliflower rice or noodles.
