Chili Prawn Pasta

Ingredients

  • 100 g pasta
  • 300 g prawns (fresh or frozen defrosted)
  • 2 cloves grated garlic
  • 1 teaspoon chili powder
  • 1 teaspoon chili flakes
  • 1 teaspoon dried herbs
  • 1 tablespoon white wine vinegar
  • 1/2 juiced lemon
  • 2 tablespoons tomato puree
  • 200 g tinned chopped tomatoes
  • 6 sliced cherry tomatoes
  • 100 g spinach
  • 20 g parmesan
  • salt & pepper
  • 1 kcal spray

Instructions

  • Cook pasta according to packet instructions.
  • Meanwhile heat a wok on medium and spray well with 1 kcal spray.
  • Add in the prawns.
  • Next add in the grated garlic, chili flakes, chili powder, dried herbs, white wine vinegar, cherry tomatoes, tomato puree and tinned tomatoes.
  • Stir and simmer for 5 minutes.
  • Season with salt and pepper to taste.
  • Squeeze in the juice of half a lemon.
  • Stir in the spinach and pasta.
  • Divide between two bowls and top with the grated parmesan.
