Chili Prawn Pasta

Servings: 2 people
- 100 g pasta
- 300 g prawns (fresh or frozen defrosted)
- 2 cloves grated garlic
- 1 teaspoon chili powder
- 1 teaspoon chili flakes
- 1 teaspoon dried herbs
- 1 tablespoon white wine vinegar
- 1/2 juiced lemon
- 2 tablespoons tomato puree
- 200 g tinned chopped tomatoes
- 6 sliced cherry tomatoes
- 100 g spinach
- 20 g parmesan
- salt & pepper
- 1 kcal spray
Cook pasta according to packet instructions.
Meanwhile heat a wok on medium and spray well with 1 kcal spray.
Add in the prawns.
Next add in the grated garlic, chili flakes, chili powder, dried herbs, white wine vinegar, cherry tomatoes, tomato puree and tinned tomatoes.
Stir and simmer for 5 minutes.
Season with salt and pepper to taste.
Squeeze in the juice of half a lemon.
Stir in the spinach and pasta.
Divide between two bowls and top with the grated parmesan.
