In a bowl, add the soy sauce, honey and vinegar.
Mix well and leave aside.
Season the diced chicken with salt and pepper.
Add the chicken to a plastic bag with the cornflour, close the bag and shake well to coat the chicken evenly (this will help to crisp up the chicken).
Heat a pan on a medium heat and spray well with 1 kcal spray.
Add the chicken to the pan and cook for about 3-4 minutes until starting to crisp, turn over and cook for a further 3 minutes.
Add the grated garlic and cook for another 2 minutes.
Reduce heat and pour the sauce over the chicken.
Stir in the sauce and cook for another 2 minutes.
