Heat a wok on medium heat.
Spray well with 1 kcal spray.
Add the pepper, garlic and onion and stir fry for 2-3 minutes.
Meanwhile, mix the cornflour in a cup with a tablespoon of water to form a smooth paste.
Add the rest of the sauce ingredients to the paste and mix well.
Add the prawns and cherry tomatoes to the wok and pour in the sauce.
Cook for another 2-3 minutes to allow the sauce to thicken and season with salt and pepper to taste.
Serve with side of choice e.g. rice/noodles/extra veg. Pictured here with rice and asparagus.
