Heat a wok on medium and spray with 1 kcal spray.
Add the onion and sweat for 2 minutes until it starts to soften.
Add the chili, garlic, ginger and curry paste and cook for 2-3 minutes stirring well.
Add the chicken, broccoli, corn, red pepper, tomato puree and coconut milk.
Bring to a simmer for 10 minutes stirring from time to time.
Add the soy sauce and season with black pepper.
Serve with boiled rice, cauliflower rice or noodles.
