Ingredients
- 100 g pasta
- 300 g prawns (fresh or frozen defrosted)
- 2 cloves grated garlic
- 1 teaspoon chili powder
- 1 teaspoon chili flakes
- 1 teaspoon dried herbs
- 1 tablespoon white wine vinegar
- 1/2 juiced lemon
- 2 tablespoons tomato puree
- 200 g tinned chopped tomatoes
- 6 sliced cherry tomatoes
- 100 g spinach
- 20 g parmesan
- salt & pepper
- 1 kcal spray
Instructions
- Cook pasta according to packet instructions.
- Meanwhile heat a wok on medium and spray well with 1 kcal spray.
- Add in the prawns.
- Next add in the grated garlic, chili flakes, chili powder, dried herbs, white wine vinegar, cherry tomatoes, tomato puree and tinned tomatoes.
- Stir and simmer for 5 minutes.
- Season with salt and pepper to taste.
- Squeeze in the juice of half a lemon.
- Stir in the spinach and pasta.
- Divide between two bowls and top with the grated parmesan.
