French Toast Crumpets

Ingredients

  • 6 crumpets
  • 2 eggs
  • 20 g of flavoured whey protein
  • 30 mls of skimmed milk
  • 1/2 teaspoon of vanilla essence

Instructions

  • In a bowl, whisk the eggs, vanilla essence, milk and protein powder until smooth.
  • Add each crumpet to the mixture and allow soak (flip them over to coat the whole crumpet with the egg mixture).
  • Heat a pan on a medium heat and spray well with 1kcal spray.
  • Add the crumpets to the pan and cook for 2-3 minutes until crispy (2-3 at a time depending on size of your pan).
  • Flip over and cook for another 1-2 minutes and repeat with remaining crumpets.
  • Serve with whatever toppings you like.
