Ingredients
- 200 g pasta shells (or any shape you like)
- 550 g diced chicken breast
- 100 g finely chopped onion
- 3 cloves grated garlic
- 700 mls chicken stock
- 200 mls skimmed milk
- 300 g chopped broccoli
- 75 g light red cheddar
- Salt & pepper
- 1 kcal spray
Instructions
- Heat a large pan medium heat and spray well with 1 kcal spray.
- Add the chicken and season with salt and pepper.
- Cook for about 5 minutes until the chicken is cooked and starting to brown.
- Add the onion and garlic and cook for another 2-3 minutes.
- Add the raw pasta, chicken stock, milk and bring to a boil.
- Reduce heat, stir and cover.
- Simmer for 15 minutes, stirring occasionally until the pasta is cooked.
- Uncover the pot and stir in the broccoli.
- Cook for another few minutes until the liquid evaporates and the broccoli has softened.
- Stir in the cheese until melted.
- Season and taste before serving.
