One Pot Cheesy Chicken Pasta

  • 200 g pasta shells (or any shape you like)
  • 550 g diced chicken breast
  • 100 g finely chopped onion
  • 3 cloves grated garlic
  • 700 mls chicken stock
  • 200 mls skimmed milk
  • 300 g chopped broccoli
  • 75 g light red cheddar
  • Salt & pepper
  • 1 kcal spray


  • Heat a large pan medium heat and spray well with 1 kcal spray.
  • Add the chicken and season with salt and pepper.
  • Cook for about 5 minutes until the chicken is cooked and starting to brown.
  • Add the onion and garlic and cook for another 2-3 minutes.
  • Add the raw pasta, chicken stock, milk and bring to a boil.
  • Reduce heat, stir and cover.
  • Simmer for 15 minutes, stirring occasionally until the pasta is cooked.
  • Uncover the pot and stir in the broccoli.
  • Cook for another few minutes until the liquid evaporates and the broccoli has softened.
  • Stir in the cheese until melted.
  • Season and taste before serving.
