Ingredients
- 100g spaghetti (raw weight)
- 200 g prawns (fresh or defrosted from frozen)
- 200 g quartered cherry tomatoes
- 2 cloves garlic
- 2 teaspoons red chili flakes
- 100 mls white wine
- 20g chipotle sauce (or any hot sauce)
- 1 handful freshly chopped parsley
- Juice of half a small lemon
- Salt & pepper
- 1 kcal spray
Instructions
- Heat a pan on a medium heat.
- In another saucepan, cook the spaghetti according to packet instructions (about 1-2 minutes less)
- Spray the pan with 1kcal spray and add the chopped garlic.
- Add the red chili flakes.
- Cook for 2-3 minutes stirring from time to time.
- Add the prawns and sauté for 2-3 minutes.
- Add the white wine and bring the sauce to a simmer for a few minutes.
- Stir in the chipotle sauce. You can swap for any hot sauce you like or leave it out completely.
- Add the parsley and squeeze in the lemon juice.
- Drain the spaghetti and add it to the pan.
- Stir well and cook for a further 1-2 minutes.
- Season with salt and pepper, and add in the cherry tomatoes.
- Stir again and serve immediately.
